Honey Cake (Eastern Europe)

Sweet cakes have a long history. The custom of eating sweet cakes on Rosh Hashanah can be traced all the way back to King David!

  • 4 cups flour
  • 1 teaspoon baking soda
  • 2½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon powdered ginger
  • ½ teaspoon allspice
  • ½ teaspoon nutmeg
  • 1½ cups sugar
  • 2 tablespoons brown sugar
  • ½ cup margarine
  • 4 eggs
  • 1 pound honey
  • ¾ cup strong coffee

Directions:

  1. Preheat oven to 350 degrees.

  2. Sift the flour together with the baking soda, baking powder, and the spices.

  3. Cream the sugars with the margarine until fluffy. Add the eggs, one at a time, mixing well. Add the honey.

  4. Stir the flour and spices together with the coffee into the sugar, margarine, and honey mixture. Mix well.

  5. Pour the batter into a greased and floured 9 x 12 inch pan.

  6. Bake the cake for 15 minutes. Reduce the oven to 325 degrees, and continue to bake the cake for 45 minutes longer or until golden brown.
